1) the oil or fat (i.e. butter) in your pan needs to be fairly hot when you add your eggs to the pan.
2) add the egg to your pan by first cracking it into a ramekin. This ensures the protein structure of the egg remains intact throughout the cooking processs.
3) When in doubt, put a lid on your pan!!! This will ensure your egg white is cooked through.
